Grammy Bear's Peach & Arugula Pasta Salad

Delicious & Light, this Salad will be your next Party Fav!

Any of my friends who have attended a dinner or party that my mother-in-law has been to can attest- she makes great food but always comes up with unique and amazing salads! She moved up here from Florida in May, so I've been fortunate to be feasting on her salads all summer long. There is a new one she has come up with that I just can't get enough of and need to share! I'll be honest, I was a little apprehensive about it at first but the way these flavors blend together are delicious!!!! 


This delicious Peach & Arugula Pasta Salad blends together delicious farm juicy peaches, small cherry tomatoes, crisp corn, perfectly al dente Farfalle noodles and zesty homegrown Arugula right from our back porch. This easy pasta salad can be made with a variety of alterations to fit your dietary needs and tastes good warm or cold (I prefer cold). 

Ingredients:

  • 8 ounces of Farfalle pasta cooked al dente then cooled (or swap out with your noodle of choice)
  • 2 large Fresh Peaches sliced
  • 1 pint Cherry Tomatoes, halved
  • 1 cup Corn: we used fresh shaved off the cob but you can use a can or thawed from frozen. 
  • 1/2 medium red Onion, thinly sliced
  • 5 ounces of baby Arugula: we grew ours from seeds on the deck this summer which made this salad an easy fix!
  • 4 ounces crumbles Feta Cheese: you can play around with your cheeses and try goat cheese or Parmesan 
  • 3tbs Extra Virgin Olive oil 
  • Fresh lemon: juiced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh cracked pepper
  • 1/4 teaspoon Red Pepper Flakes
  • Shrimp (or protein of your choice)
  • cracked salt and pepper to taste

Instructions:

  1. Bring a large pot of water to a boil and add some salt. Add pasta and cook to al dente according to the package (time will vary). 
  2. While the pasta is cooking, in a small bowl, whisk together the olive oil, lemon juice, red pepper flakes, salt and pepper until well combined. Set aside. 
  3. Once pasta is finished, drain in strainer and place it in a large mixing bowl. 
  4. Pour the dressing over the warm pasta
  5. Immediately add the feta and toss the pasta gently
  6. Gently toss in the peach slices, cherry tomatoes, corn, red onion, arugula and shrimp. 
  7. Salt and pepper to taste. Add more olive oil or lemon juice if necessary.
  8. Enjoy warm or cold!
