This is one of the greatest recipes for the slow cooker. It is so tasty and easy to make. And it’s always been a crowd pleaser – even for my 6 and 3-year-olds! I made a few alterations to the original recipe by adding some fresh veggies from my garden.
Ingredients:
- 1 lb. mild Italian sausage
- 1 bag frozen green beans
- 1 cup fresh zucchini, chopped (optional)
- 1 cup fresh diced tomatoes or 1 can petite diced tomatoes
- 3 carrots, sliced (optional)
- 1 medium onion, diced
- 1 Tbsp. Italian seasoning
- 1 32 oz. box chicken stock
- 1 9 oz. container refrigerator cheese tortellini
- Fresh, shredded Parmesan cheese
Instructions:
- Crumble the raw sausage in slow cooker (if using sausage with casing just removing casing and crumble).
- Add tomatoes, diced onions, frozen green beans, Italian seasoning and chopped zucchini and carrots (if using).
- Cook on high 3-4 hours (Mix occasionally until sausage is cooked).
- Add 1 box of chicken stock and cook on high for 1 hr.
- Add cheese tortellini and cook on low for an additional 1/2 hr.
- Serve topped with fresh shredded Parmesan cheese.
